The Story

The Four Seas restaurant in Seattle was built in 1962 by Abe Lum and Chin Han. The Dynasty Room was the bar. It was known for being a place where people of diverse backgrounds could gather, including different races and ages. The restaurant served as a social hub for the community, attracting a diverse clientele.

Otagiri Mercantile Company (OMC). The company was an importer of porcelain, stoneware and giftware in the San Francisco area for more than 46 years. The products were made in Japan and were imported for distribution and sold to high end Restaurants, Bars, Department Stores and Gift Shops worldwide. Otagiri products were handcrafted, hand painted and highly sought after.

The Drink

Far East One of the things that seperate orgeat from other almond syrups is the orange blossom water used to flavor it. While it doesn’t dominate the almond flavors, it adds an ethereal floral note to the finish that can be magical in cocktails. The Far East draws out those floral notes in a surprisingly creamy cocktail in which orange flower water and almond are allowed to take center stage.

Gin – 2 ounces
Fresh Lemon Juice – ¼ ounce
Orgeat Syrup – 1 ounce
Pineapple Syrup – 1 ounce
Angostura Bitters – 2 dashes

Combine all the ingredients in a shaker and fill with ice cubes. Shake vigorously for 20 to 30 seconds. Strain the contents of the shaker into the Old Man Mug. Garnish with a maraschino cherry speared on a cocktail pick.
